I make over eight styles and lengths of fillet knives. All
handles have at least four coats of poly-urethane to
protect them from aging, fish blood and slime.

  1. Beautiful fillet knives. What steel are you using on your Lit'l Tex fillet knife? I'm very interested in it. And, I'm wondering about the steel to see if it's any better, or different, than most run of the mill fillet knives.
